Book Preface
In 2011, I was diagnosed with an autoimmune disease that forced me to stop playing tennis. I was experiencing chronic fatigue, swollen joints, and other issues that are not so unusual for people who are affected by these types of diseases. What I learned from this experience is that, unfortunately, many medical professionals are not sure how to treat or diagnose these types of autoimmune issues. I was completely committed to finding a way to take back control of my life and did a great deal of reading during this time. I learned that a plant-based diet could address many of the issues that I was experiencing.
I ultimately adopted a plant-based vegan diet, which was quite frankly overwhelming.
When making my own transition, I was lucky enough to get support from a variety of professionals. I struggled through many of the common questions: Am I getting enough protein? Am I getting the proper nutrients? Why am I still so hungry?
I had the privilege of meeting Charity, who is extremely impressive. Charity celebrates growth and creativity, which also means that she doesn’t seem to shy away from making mistakes. I also enjoy the fact that she’s candid about her own journey of how she got to where she is today. Like so many of us, her change did not happen overnight nor was it linear. I also love that Charity is taking a practical approach to a plant-based diet, which she has branded Pleganism. It’s impressive that her approach is so constructive. She provides support and encouragement as she guides you through this exploration.
I hope that people’s stereotypes about what plant-based eating is are flipped upside-down when they open Charity’s book. That they see that they can have everything they love, but better for them and better for the planet. That they can transform everyday favorites like nachos and pound cake (yes, really!) into delicious plant-based meals without sacrifice. Charity has done the work and showed us a world full of opportunities. Now, with Unbelievably Vegan in our hands, we can dive in feeling supported and excited.
